They live in great coffee-farming places and we live in Seattle, which honestly is not great for growing coffee but is fantastic for caring about coffee, which is what we’re doing. We’re totally self-owned and independent, except that we work closely with coffee growers and millers around the world. Here in Seattle we barely get eight hours of sun per day, which is exactly why we need our coffee to be truly, insanely, incredible. Actually, we don’t make it in Seattle, we just roast it here, like we’ve been doing for over 25 years. She soon became Director of Wholesale at Dapper & Wise, where she regularly cupped at quality control cuppings with the team, hosted cuppings for the public and trained wholesale partners on proper coffee preparation. This involved tasting all the coffees they’d be serving that day, dialing in espresso or approve a drip recipe. Initially as a barista at the Portland, OR Insomnia Coffee and Dapper & Wise, her job was to stay on top of quality and help customers find coffees they were excited about.
